Ellie's Chicken Dinners

One of the most versatile main ingredients for dinner or lunch is chicken. It can be the star of a spread, or it can play more of a supporting role in meals when paired with vegetables or pasta. Unfortunately, when it comes to chicken, though, we tend to take what can be a healthy bite and turn into high-fat fare by frying it or mixing it with too much butter. Dry, bland chicken, however, doesn't have to be your family's fate for chow.
